Cake Bites

This recipe resulted from my sudden desire for one of those health food store cookies. If you’re curious about the brand, email me.Those cookies are yummy, but I figured I could make something equally tasty. The bites are dense so you won’t need many to feel satisfied. 

The oil may be reduced if you feel its necessary. ;-)

1/3 cup whole almonds
1/2 cup macadamia nuts
2 medjool dates (pitted)
1/8 teaspoon of sea salt (or a pinch of sea salt)
1/4 teaspoon cinnamon
1 tablespoon coconut oil
1 teaspoon coconut flakes

Place almonds and macadamia nuts in a food processor and grind until crumbly or fine (depends on your processor). Add dates and process again. Then add the remaining ingredients and process again until the mixture clumps together easily. You may choose to eat it as is or you may decide to do what I did and roll the mixture into individual spheres using your hands. 

Note: Your hands will be slightly oily due to the coconut oil in the mix.

Tahini Malt

This delicious and filling recipe was passed on to me by siSTAR Faona Strong. She offered approximations (as most gifted cooks do. lol), but i had to figure out a recipe so I could share it with y’all. :)

Tahini Malt

2 cups almond milk
2-3 medjool dates (you may use another sweetener of your choice)
1/4 teaspoon sea salt
1/4 teaspoon cinnamon
1/4 teaspoon nutmeg
1 tablespoon irish moss flakes
4 tablespoons tahini (sesame seed paste)

Blend all ingredients and place in refrigerator to chill. Enjoy!

Note: I allowed the Irish Moss flakes to sit in hot water for 5 minutes. After 5 minutes or so, the Irish Moss will have a gel-like texture.
